Smoked Gouda-Chorizo Jalapeno Poppers

Hollowed pepper halves with cheese, chorizo, cream cheese and more, then baking them until bubbly.

2 links Mexican chorizo, casings removed

1/2 pound smoked gouda, shredded

1/4 cup finely chopped red onions

1 egg

1/2 cup cream cheese

3 tablespoons sour cream

1 tablespoon hot sauce (recommended: Frank's Red Hot)

Salt and freshly ground black pepper

12 large jalapeno peppers, stemmed, seeded and halved

Special Equipment: parchment paper

Preheat oven to 375 degrees F.

Brown chorizo in a skillet over medium-high heat, about 8 to 10 minutes. Drain and place into a large mixing bowl. Add the cheese, red onion, egg, cream cheese, sour cream, hot sauce, and salt and pepper, to taste. Press into jalapeno halves and assemble on a parchment-lined baking sheet. Bake until golden and bubbly, about 20 minutes.

Chicken Cheesesteaks with Peppers

Provolone is one to the traditional cheeses for steak sandwiches, but you can also use mozzarella or Monterey Jack. One of our family favorites.

1 lb of chicken cutlets (3 chicken breast)

2 tablespoons olive oil

coarse salt and ground pepper

2 mixed bell peppers ( ribs and seeds removed), thinly sliced

1 large red onion, halved and thinly sliced

4 garlic cloves, thinly sliced

6 oz. sliced provolone cheese

4 soft hoagie rolls, split lengthwise

1/4 cup light mayonnaise

On Foreman grill, the chicken breast; saute onion, garlic, peppers, salt & pepper in olive oil. Mix onion, peppers and chicken breast (cut into strips) on a baking dish; Top the chicken, peppers & onions with the provolone cheese; broil until cheese is bubbling. 30 seconds to 1 minute. Scoop out most of the doughy center from both halves of rolls; discard. Spread rolls with mayonnaise; fill with chicken and vegetables. Serve immediately.

This is a favorite.

Chicken Tender Fried Rice

In a hurry or not this is so simple. Use deli chicken tenders for this tasty dish.

3 green onions, thinly sliced

3 Deli fried chicken tenders (6–8 oz)

1 (10-oz) bag frozen precooked rice with vegetables

1 tablespoon sesame oil

3 tablespoons stir-fry sauce

2 tablespoons egg substitute (or 1 small egg, beaten)

Prep

•Slice onions (green part only).

•Cut chicken into small bite-size pieces.

Steps

1.Cook rice blend following package instructions for microwave.

2.Preheat large sauté pan on medium-high 2–3 minutes. Add sesame oil and rice; cook and stir 1 minute to toast rice. Stir in stir-fry sauce.

3.Add egg slowly while cooking and stirring 1–2 minutes to cook egg. Stir in chicken and green onions; cook and stir 1–2 minutes or until hot. Serve.

This is so simple to make. I found this recipe from the Apron's Recipe collection.

Slow-Cooker Mexican Pot Roast

This pot roast, richly flavored with Mexican spices

1 large onion, halved, thinly sliced

1lb baby red potatoes (about 8 potatoes)

1 boneless beef chuck roast (2 1/2 to 3 lb)

1 package (1 oz) Old El Paso™ original taco seasoning mix

2 teaspoons ground cumin

1/2 teaspoon ground red pepper (cayenne)

1/2 teaspoon salt

1/2 teaspoon pepper

1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, drained

Spray 5-quart slow cooker with cooking spray. Arrange onion and potatoes in slow cooker. Place beef over vegetables. Sprinkle with taco seasoning mix, cumin, red pepper, salt and pepper. Pour tomatoes over beef and vegetables.

Cover; cook on Low heat setting 8 to 9 hours or until beef is tender. Serve beef and vegetables with sauce.

Coconut-Cream Cheese Pie

Taste of the tropics. Vanilla, coconut and cream cheese with a crust of vanilla wafers.

48 vanilla wafers, finely crushed (about 1-1/2 cups)

1/4 cup butter, melted

1-1/4 cups BAKER'S ANGEL FLAKE Coconut, divided

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, divided

2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding

2 cups plus 1 Tbsp. cold milk, divided

2 cups thawed COOL WHIP LITE Whipped Topping

1 Tbsp. sugar

Heat oven to 350ºF.

Combine wafer crumbs, butter and 1/4 cup coconut; press onto bottom of 9-inch pie plate. Bake 10 min. Cool.

Microwave cream cheese in microwaveable bowl on HIGH 10 sec. or just until softened; stir until creamy. Beat pudding mixes and 2 cups milk in large bowl with whisk 2 min. Add half the cream cheese; mix well. Stir in 3/4 cup of the remaining coconut and 1 cup COOL WHIP. Pour into crust.

Add sugar and remaining milk to remaining cream cheese; mix well. Stir in remaining COOL WHIP; spread over pie. Refrigerate 3 hours. Meanwhile, toast remaining coconut.

Sprinkle toasted coconut over pie just before serving.

A recipe from Kraft. Creamy, cool and delicious.
