Chicken Piccata Pasta Toss
One of my favorites, loaded with capers, lemon, and chicken.
1 1/3 pounds chicken breast tenders, cut into 1-inch pieces
Salt and pepper
1 1/2 tablespoons butter
4 cloves garlic, chopped
2 shallots, chopped
2 tablespoons all-purpose flour
1/2 cup white wine
1 lemon, juiced
1 cup chicken broth or stock
3 tablespoons capers, drained
1/2 cup flat-leaf parsley, chopped
1 pound penne rigate pasta, cooked to al dente
Chopped or snipped chives, for garnish
Heat a deep nonstick skillet over medium-high heat. Add a tablespoon of extra-virgin olive oil and the chicken to the pan. Season chicken with salt and pepper. Brown chicken until lightly golden all over, about 5 to 6 minutes. Remove chicken from pan and return the skillet to the heat. Reduce heat to medium. Add another tablespoon extra-virgin olive oil and 1 tablespoon butter, the garlic and shallots to the skillet. Saute garlic and shallots 3 minutes. Add flour and cook 2 minutes. Whisk in wine and reduce liquid 1 minute. Whisk lemon juice and broth into sauce. Stir in capers and parsley. When the liquid comes to a bubble, add remaining 1/2 tablespoon butter to the sauce to give it a little shine. Add chicken back to the pan and heat through, 1 to 2 minutes. Toss hot pasta with chicken and sauce and serve. Adjust salt and pepper, to your taste. Top with fresh snipped chives.

Chocolate Icebox Pie
Here is a great summer pie for all the chocolate lovers in your life.
2/3 cup milk
3/4 cup semisweet chocolate morsels
1/4 cup cold water
2 tablespoons cornstarch
1 (14-ounce) can sweeten condensed milk
3 large eggs, beaten
1 teaspoon vanilla extract
3 tablespoons butter or margarine
1 (6-ounce) ready-made chocolate crumb pie crust
1 cup whipping cream
1/4 cup sugar
1/2 cup chopped pecans, toasted
1 (1.55-ounce) milk chocolate candy bar, chopped
Heat milk until it just begins to bubble around the edges in a 3-quart saucepan over medium heat (do not boil). Remove from heat, and whisk in chocolate morsels until melted. Cool slightly.
Stir together cold water and cornstarch until dissolved.
Whisk cornstarch mixture, sweetened condensed milk, eggs, and vanilla into chocolate mixture. Bring to a boil over medium heat, whisking constantly. Boil 1 minute or until mixture thickens and is smooth. (Do not overcook.)
Remove from heat, and whisk in butter. Spoon mixture into piecrust. Cover and chill at least 8 hours.
Beat whipping cream at high speed with an electric mixer until foamy; gradually add sugar, beating until soft peaks form. Spread whipped cream evenly over pie filling, and sprinkle with pecans and candy bar pieces.

A crisp sugar cookie is a canvas for this masterpiece. Topped with sweetened cream cheese and artfully arranged fresh fruit, this dessert is almost too pretty to eat.
One of my families favorites refreshing summer cakes. Thank you Kraft for reminding me about this cake. I must make at once.

What am I doing? Cleaning out my pantry. I have a large pantry and a small pantry. The small pantry was in need of some help. Filled the plastic storage containers, baskets for snacks, vitamins all in a row and my smoothie powders all in the same place.
Gratitude: For organizational skills and that my hubby can find things without asking.

Crying Out To Our Father
What do you need to bring before the Lord in prayer today? How can Psalm 123 and the Lord’s Prayer help you do so?
Crying out to our Father is the best thing for our souls. But we don’t have to feel frustrated if we don’t always know where to start. The Bible has provided us with the best examples, guiding us toward prayers that usher us into God’s throne room of mercy and grace. (Hebrews 4:16)
Father, You are enthroned in heaven. We lift our eyes up to You. We wait on You, Lord. Please provide us with everything we need for today. Fill us with Your love and mercy. We pray Your will be done on earth and in our lives. In Jesus’ name, amen.

Shrimp Scampi with Roasted Peppers and Spinach
Shrimp Scampi with a little twist. Add spinach and roasted pepper. I've even used sun-dried tomatoes to the dish. Chicken broth really lightens up this meal.
3 cloves garlic, thinly sliced
1 cup roasted red peppers, finely chopped
1 oz Deli Parmesan cheese, finely grated
8 oz linguine pasta
2 tablespoons olive oil
12 oz peeled/deveined shrimp, thawed
1/4 teaspoon crushed red pepper
1/2 teaspoon kosher salt, divided
1/2 teaspoon pepper, divided
1/2 cup reduced-sodium chicken broth (or stock)
3 tablespoons unsalted butter
5 oz baby spinach leaves (about 4 cups)
Bring water to boil for pasta.
Slice garlic. Chop peppers.
Grate cheese (1/3 cup).
Cook and drain pasta following package instructions.
Preheat large sauté pan on medium 1–2 minutes. Place oil and garlic in pan; cook 3–4 minutes or until the garlic edges begin to turn golden.
Add peppers, shrimp, pepper flakes, 1/4 teaspoon salt, and 1/4 teaspoon pepper; cook and stir 1 minute.
Add broth; cook 2–3 minutes or until reduced by about one-half and shrimp have just turned pink and opaque.
Reduce heat to low; stir in butter, spinach, cheese, pasta, and remaining 1/4 teaspoon each salt and pepper. Toss until butter and cheese melts and spinach wilts. Serve.

Spicy Sriracha Popcorn
Spice up your popcorn so easy.
3 tablespoons vegetable oil
1/2 cup popcorn kernels
4 tablespoons butter
2 teaspoons sriracha
1 teaspoon kosher salt
Coat the bottom of a large pot with the vegetable oil. Pour in the popcorn kernels, cover and set over medium-high heat. When you hear the first kernels pop, begin to shake. Continue to cook, shaking, until all the corn is popped. When you no longer hear popping, remove from the heat and transfer to a large bowl.
In a pan, melt the butter, add the sriracha and stir. Drizzle over the popcorn and toss. Season with salt.

What am I doing? I lost a friend this past weekend to cancer. She was a beautiful person inside and out. A young woman that loved the Lord and served Him faithfully in all she did.
Gratitude: I'm thankful for the legacy that Aimee has left for everyone that knew her.
Now as Aimee would say, there's work to do let's get week 54 started.
Can't wait to see what you have to post this week.

Strawberry-Rhubarb Crumble
Rhubarb can be tart for most to enjoy, but pair it with sweet strawberries and you'll have a perfectly balanced flavor. Oh, a may I add hubby's favorite is rhubarb and strawberries.
Almond Crumble Topping:
3/4 cup slivered almonds, toasted
1 cup all-purpose flour
1/3 cup sugar
1/4 teaspoon kosher salt
1 stick butter
Crumble:
6 cups rhubarb, cut into 1/2-inch pieces
1 cup roughly chopped strawberries
1/2 cup sugar
2 tablespoons cornstarch
Zest and juice of 1/2 lemon
Topping:
1 cup mascarpone cheese
For the almond crumble topping: In a food processor, pulse the almonds until finely ground. Add the flour, sugar, and salt. Pulse to incorporate. Add the butter and pulse until the butter is dispersed in walnut-sized pieces throughout. Set aside at room temperature.
For the crumble: Mix the rhubarb, strawberries, sugar, cornstarch, lemon zest and lemon juice in a large mixing bowl. Fill four 4-inch ramekins almost to the top. Sprinkle about 2 tablespoons of the almond crumble on the top and place in the oven. Bake until the filling bubbles and the topping is golden brown, about 20 minutes. Let stand for 5 minutes.
For the topping: Using a whisk or whisk attachment and stand mixer, whip the mascarpone on medium-high speed for about 2 minutes, to increase the volume. Reserve and refrigerate until ready for use.
To serve: Once rested, top each ramekin with 2 tablespoons of whipped mascarpone.

Puff Pastry Pizza
Make pizza any way you want. Easy with this puffy crust.
Crust:
2 sheets frozen puff pastry (from a 17.3-ounce package, such as Pepperidge Farm), thawed
Toppings:
1 tablespoon butter
8 ounces mushrooms, sliced
2 cloves garlic, minced
1/4 cup white wine
Kosher salt and freshly ground black pepper
Olive oil, for brushing
1 cup shredded fresh mozzarella
8 yellow and/or red grape tomatoes, halved
2 tablespoons black olives
8 slices pepperoni
2 tablespoons sliced drained pepperoncini
1/4 cup crumbled goat cheese (chevre)
6 leaves fresh basil, cut into chiffonade
1 teaspoon fresh oregano
4 slices prosciutto
1/4 cup arugula
1/4 cup shaved Parmesan
For the crust: Slice the 2 pastry sheets in half down the middle. Place the halves on 2 baking sheets lined with parchment or baking mats.
Preheat the oven to 415 degrees F, then start on the pizza toppings.
For the toppings: In a large skillet over medium-high heat, melt the butter and saute the mushrooms and garlic for 2 minutes. Pour in the wine and season with salt and pepper. Continue cooking until the mushrooms are cooked down and the liquid is mostly gone 5 to 7 minutes. Remove from the heat and set aside.
To build the pizzas: brush a thin layer of olive oil in the center of each puff pastry half, leaving a 1/2-inch border. On each piece of pastry, sprinkle on 1/4 cup of the mozzarella, again so that it covers all but a 1/2-inch border around the pastry. Sprinkle the cooked mushrooms on one piece of pastry. On the second, sprinkle on the halved tomatoes and black olives. On the third, lay the pepperoni slices and sliced pepperoncini. Press the toppings lightly into the cheese. Leave the fourth piece of pastry plain (just cheese).
Bake for 15 minutes; the pastry could go crazy and puff up in areas here and there, but don't worry! It'll be fine.
Remove from the oven and sprinkle the goat cheese crumbles and half the basil over the mushroom pizza. Sprinkle the remaining basil over the tomato pizza. Top the pepperoni pizza with the fresh oregano. Top the plain pizza with the prosciutto, arugula and Parmesan shards
Slice each into smaller pieces and serve!

What am I doing: I helped hubby lay sod in our yard this week. It was his birthday yesterday so the joke was I bought him 5 pallets of sod for his birthday. Not true. We spent a lovely evening with friends for dinner and he made out pretty well.
Gratitude: I'm thankful that sod is laid!

No Churn Homemade Ice-Cream
Super easy no-churn summer ice-cream recipes. Make it as special as you would like.
Strawberry Ice-Cream
1 pound frozen strawberries, thawed at room temperature for 10 minutes
One 14-ounce can sweeten condensed milk
1 teaspoon pure vanilla extract
Pinch fine salt
2 cups heavy cream, cold
Mix-In Options:
Pretzel: 1 1/2 cups yogurt-covered pretzels, broken-up
Donut: 3 jelly donuts, cut into small pieces
Balsamic: 2 tablespoons reduced balsamic vinegar (Simmer 1/2 cup vinegar until reduced to 2 tablespoons; let cool.)
Special equipment: a 9-by-5-by-3-inch metal loaf pan, chilled
For the ice cream: Pulse the strawberries in a food processor until you achieve pea-size chunks. Add the condensed milk, vanilla and salt. Pulse to combine; remove to a medium bowl and set aside.
Whip the cream with a mixer on medium-high speed until firm peaks form, about 2 minutes. Fold about 1 cup of the whipped cream into the strawberry mixture with a rubber spatula until combined, then fold the lightened mixture into the whipped cream until well blended. Pour into a chilled 9-by-5-by-3-inch metal loaf pan, and freeze, covered, until thick and creamy, like soft-serve, about 2 hours. Swirl in any desired mix-ins with a spoon. Continue to freeze, covered, until solid and scoopable, about 3 hours more.
Chocolate Ice-Cream
One 14-ounce can sweeten condensed milk
1/2 cup unsweetened natural cocoa powder
1 teaspoon pure vanilla extract
Pinch fine salt
2 cups heavy cream, cold
Mix-in options:
Rocky Road: 1/2 cup chocolate-covered almonds, crushed, and 2/3 cup mini marshmallows
Malted: two 5-ounce boxes chocolate malted milk balls, halved or coarsely chopped
Smoky and Spicy: 1 tablespoon chipotle chiles in adobo sauce, chopped
For the ice cream: Whisk together the condensed milk, cocoa powder, vanilla and salt in a large bowl. The mixture will become very thick; set aside.
Whip the cream with a mixer on medium-high speed until firm peaks form, about 2 minutes. Fold about 1 cup of the whipped cream into the cocoa mixture with a rubber spatula until combined, then fold the lightened mixture into the whipped cream until well blended. Pour into a chilled 9-by-5-by-3-inch metal loaf pan, and freeze, covered, until thick and creamy, like soft-serve, about 2 hours. Swirl in any desired mix-ins with a spoon. Continue to freeze, covered, until solid and scoopable, about 3 hours more.
Vanilla Ice-Cream
One 14-ounce can sweeten condensed milk
2 teaspoons pure vanilla extract
Pinch fine salt
2 cups heavy cream, cold

Cookies and Cream: 12 chocolate sandwich cookies, crushed
Crunchy Cereal: 1 1/2 cups cinnamon crunch cereal, crushed
Cookies and Lemon: 1/2 cup jarred lemon curd and 1 cup shortbread cookies, crushed
For the ice cream: Whisk together the condensed milk, vanilla, and salt in a large bowl; set aside.
Whip the cream with a mixer on medium-high speed until firm peaks form, about 2 minutes. Fold about 1 cup of the whipped cream into the condensed milk mixture with a rubber spatula until combined, then fold the lightened mixture into the whipped cream until well blended. Pour into a chilled 9-by-5-by-3-inch metal loaf pan, and freeze, covered, until thick and creamy, like soft-serve, about 2 hours. Swirl in any desired mix-ins with a spoon. Continue to freeze, covered, until solid and scoopable, about 3 hours more.
