No-Bake Cookies
This is Grandma Jan's recipe and my daughter Stefanie started making this recipe when she was a little girl. Chocolate, peanut butter and oatmeal...and no baking!
Mix in pan
2 cups of sugar
1/4 cup cocoa
1/2 cup milk
1/2 cup or 1 stick of butter
Put on medium heat and cook until it starts to boil. Remove from heat. Cool for 1 min.
Add
1 teaspoon vanilla
1 pinch of salt
1/2 cup of chunky or smooth peanut butter
3 cups of instant oatmeal
Stir well. Drop by teaspoonfuls on wax paper. Chill till harden.
May need to add a little more oatmeal to the mix.

Like the color blue but not too much blue, like me?
How about a stunning blue door and area rug to complement it?
This entry would be cheery on a dark dreary rainy day.
I'm fond of the mirror over the entry table.
The red in the area rug really makes this small space pop.

Quiche With Chilies
This fluffy quiche is made with cottage cheese and lots of Monterey Jack cheese.
Don't let the chilies scar you. It adds a nice contrast.
5 eggs, beaten
1 cup cottage cheese
4 oz. can of green chilies
8 oz. grated Monterey Jack cheese
1/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup butter
Mix together beaten eggs, cottage cheese and green chilies. in a separate bowl blend Monterey Jack cheese, flour, baking powder, and salt. Fold into the egg mixture and blend together. Melt butter in the bottom of a casserole dish or pie dish and pour in the mixture. Bake at 350 for 30-35 minutes.
This recipe was given to my friend Linda Peshek. You can add ham, broccoli, etc.

What am I doing? Planning out my dinners last week, we had Italian every night. Then we went to dinner with friends and it was Italian. I love Italian but I didn't do so well in the variety department.
Gratitude: Thankful that hubby didn't complain. It all was so good. Going to do better this week.

What to Eat?
Because I’m always looking for ways to serve my family healthy and delicious food, I started experimenting with my go-to veggies and ground beef. I came up with this favorite that my kids actually request! —Megan Niebuhr, Yakima WA
This is the family favorite dish for special occasions, and we always make it for my granddaughter's birthday. Mushrooms are a wonderful addition if you like them. —Vickie Oldham, Dubuque, Iowa

Pepper Steak
This tender pepper steak is packed with flavor, serve over rice.
2 tablespoons of cooking oil
1 1/2 lbs. boneless chuck steak cut into thin strips
1 envelope Lipton Onion or Beefy Onion Soup Mix
2 1/2 cups water
2 green peppers, cut into thin strips
1 1/2 tablespoons cornstarch
In large skillet, heat oil and brown beef, add Lipton Onion Soup Mix blended with 2 cups of water. Simmer covered 30 minutes. Stir in peppers and simmer covered 10 minutes or until beef is tender, add cornstarch blended with remaining water, bring to a boil, then simmer, stirring constantly until mixture is slightly thickened, about 5 minutes. Serve if desired, with hot cooked rice.
This recipe was from Lipton Soup Mix Creative Cookery Cookbook and has been a part of the families recipe for more than 20 years.

6 years ago I started re-decorating my home using blues as my base color or as a strong accent color, all because of a picture that was really important to my husband that hung on one of our walls.
Love those blue pendant lights
and how it makes the blue in the chairs pop.
Blue was never one of my favorite colors to decorate with in the past but I've come to love the color. I love the look and just as important the way it feels. Cool, refreshing and calm. I don't think I will ever change from this color palette.
This is what I have learned about the color blue.
Blue is a cool and calming color that shows creativity and intelligence. It is a color that symbolizes loyalty, strength, wisdom, and trust.
Blue seeks peace and tranquility and promotes physical and mental relaxation. The color blue reduces stress and creates a sense of calmness, relaxation, and order. Try and lie on your back and look up at the blue cloudless sky. Blue lowers metabolism. The paler the blue color, the freer we feel.
Light blue represents health, healing, tranquility, understanding, and softness.
Dark blue is associated with knowledge, power, integrity, and professionalism.
This is how the color blue affects you
- Soothes and relaxes, prevents chaos
- Opening up communication
- Extends your perspective and intuition ability
- Provides a feeling of coolness and peace
Now that you know of my new love for blue, each week I will post a blue picture to inspire us to decorate with one of the many shades of blue. I may even post a picture or two of something blue from my home.
