Marshmallow Creme-Filled Bundt Cake
It's a Twinkie Cake!
One 15.25-ounce box yellow cake mix (plus required ingredients)
6 large egg whites, beaten to stiff peaks
6 tablespoons unsalted butter, at room temperature
1 cup marshmallow creme
1/2 cup confectioners' sugar
1 tablespoon heavy cream
Prepare a 12-cup bundt pan according to the cake mix package directions. Mix the cake according to the package directions. Fold the egg whites into the batter with a rubber spatula until fully combined. Pour the batter into the prepared bundt pan and bake according to the package directions. Let cool completely.
Combine the butter and marshmallow creme in a large bowl and beat with an electric mixer until smooth and well combined. Add the confectioners' sugar and cream and beat until fluffy, about 3 minutes. Put the marshmallow mixture into a piping bag fitted with a long thin round tip.
Flip the cake so it is flat-side up and make 12 evenly-spaced holes in the bottom of the cake using a skewer, pressing only halfway down into the cake and wiggling the skewer slightly to widen the holes until they are each about 1 inch wide. Insert the piping tip in each of the hollowed-out holes and pipe in some marshmallow mixture until it starts to ooze out the top of the hole. Flip the cake flat-side down onto a cake stand or serving platter. Serve immediately or cover and refrigerate for up to 2 days.

Crunchy Noodle Salad
Spaghetti, snap peas, soy sauce, honey, peanut butter...loaded with an oriental flavor.
Kosher salt
1 pound thin spaghetti
1 pound sugar snap peas
1 cup vegetable oil
1/4 cup rice wine vinegar
1/3 cup soy sauce
3 tablespoons dark sesame oil
1 tablespoon honey
2 garlic cloves, minced
1 teaspoon grated fresh ginger
3 tablespoons toasted white sesame seeds, divided
1/2 cup smooth peanut butter
2 red bell peppers, cored and seeded, and thinly sliced
4 scallions (with and green parts), sliced diagonally
3 tablespoons chopped fresh parsley leaves
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions. Drain and set aside.
Meanwhile, bring another large pot of salted water to a boil, add the sugar snap peas, return to a boil, and cook for 3 to 5 minutes, until crisp tender. Lift the sugar snap peas from the water with a slotted spoon and immerse them in a bowl of ice water. Drain.
For the dressing, whisk together the vegetable oil, rice wine vinegar, soy sauce, sesame oil, honey, garlic, ginger, 2 tablespoons sesame seeds and peanut butter in a medium bowl.
Combine the spaghetti, sugar snap peas, peppers and scallions in a large bowl. Pour the dressing over the spaghetti mixture. Add the remaining 1 tablespoon of sesame seeds and the parsley and toss together.

Easy Coconut Cream Pie
So easy creamy coconut pie.
3/4 cup sugar
3 tablespoons all-purpose flour
1/8 teaspoon salt
3 cups whole milk
3 large eggs, beaten
1-1/2 cups sweetened shredded coconut, toasted, divided
1 tablespoon butter
1-1/2 teaspoons vanilla extract
1 pastry shell (9 inches), baked
In a medium saucepan, combine sugar, flour and salt. Stir in milk; cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer.
Remove from the heat; gradually stir about 1 cup of hot mixture into beaten eggs. Return all to saucepan; cook and stir over medium heat until nearly boiling. Reduce heat; cook and stir about 2 minutes more (do not boil). Remove from the heat; stir in 1 cup coconut, butter and vanilla.
Pour into pie shell; sprinkle with remaining coconut. Chill for several hours before serving.
Tips
Put the lime in the coconut by stirring in 1 teaspoon grated lime peel after removing sugar mixture from the heat.
This filling is super easy and delicious in a graham cracker crust.

Old Fashioned Rice Pudding
After ordering take home Chinese food we always seem to have so much steam white rice leftover. This is a great way to use up the rice leftovers and it tastes so good.
4 cups milk
1 cup Minute Rice
1/4 cup raisins (optional)
1 egg, well beaten
1 pkg. (4 serving size) Jello vanilla flavor pudding and pie filling
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
Combine milk, rice, pudding mix, raisins and egg in a saucepan. Stir over medium heat until mixture just comes to a boil. Cook 5 minutes, stirring twice. Pour into dessert dishes or serving bowl. Sprinkle with cinnamon and nutmeg; serve warm. Makes 10 servings.

I've not always been a fan of open shelves in the kitchen instead of cabinets but these work well.
I like the pop of color on the stools.
The style of the pendant lights is a nice touch as are the large print pictures.

Slow Cooker Pineapple Upside-Down Dump Cake
Dump Cakes have been a favorite and now a pineapple upside-down dump cake in a slow-cooker! Awesome.
3/4 cup butter, divided
2/3 cup packed brown sugar
1 jar (6 ounces) maraschino cherries, drained
1/2 cup chopped pecans, toasted
1 can (20 ounces) unsweetened pineapple tidbits or crushed pineapple, undrained
1 package yellow cake mix (regular size)
Vanilla ice cream, optional
In a microwave, melt 1/2 cup butter; stir in brown sugar. Spread evenly onto bottom of a greased 5-qt. slow cooker. Sprinkle with cherries and pecans; top with pineapple. Sprinkle evenly with dry cake mix.
Melt remaining butter; drizzle over top.
Cook, covered, on high until fruit mixture is bubbly, about 2 hours. (To avoid scorching, rotate slow cooker insert one-half turn midway through cooking, lifting carefully with oven mitts.)
Turn off slow cooker; let stand, uncovered, 30 minutes before serving. If desired, serve with ice cream.
Tips
Let the cake stand, uncovered, after cooking to allow the steam to escape. As it cools, the cake and saucy pineapple mixture set up a bit.
Sprinkle the cake mix in an even layer over the pineapple. If it’s piled high in the center, the middle of the cake may be undercooked.
A large slow cooker is used to keep the ingredient layers thin and promote even cooking.
To toast nuts, bake in a shallow pan in a 350° oven for 5-10 minutes or cook in a skillet over low heat until lightly browned, stirring occasionally.

Hello everyone. Fall is in the air, well in Florida you have to pretend it's in the air. Do you add touches of Fall decorations to your home? I started this past weekend by adding a fall fragrance plug-in and changed my garden flag. By the end of the week, I'll change the wreath and add a few pumpkins around the house. I'm really liking the new chalk painted pumpkins this year. I may need to invest in a few.

Tex-Mex Taco Salad
Taco Seasoning, Black Beans, Avocado, Sour Cream all whipped up to make this delight.
1/2 cup MIRACLE WHIP Dressing
1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1 Tbsp. TACO BELL® Taco Seasoning Mix
1 can (15 oz.) black beans, rinsed
6 cups coarsely chopped iceberg lettuce
1/2 cup sliced red onions
1-1/2 cups KRAFT Mexican Style Finely Shredded Four Cheese
1 cup grape tomatoes, halved
1 avocado
1/4 cup loosely packed fresh cilantro
MIX first 3 ingredients until blended. LAYER beans, lettuce, onions, cheese and tomatoes in large bowl.
SPREAD dressing mixture over salad. Refrigerate 2 hours.
CHOP avocado; spoon over salad just before serving. Sprinkle with cilantro.
Substitute
For a crunchy topping, substitute 1 cup bite-size tortilla chips for the chopped avocado.
Variation
Prepare using MIRACLE WHIP Light Dressing and KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese.
Here is another delicious and healthy salad. The recipe came from Kraft.

Quick Shells and Cheese
Quick cheesiest family-friendly meal.
1 pound mini shells pasta
2 cups whole milk
1 tablespoon butter
2 cups grated Cheddar-Jack
8 ounces processed cheese, such as Velveeta, diced
1 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon seasoned salt
Cook the pasta according to the package directions.
Heat the milk and butter in a large saucepan over medium heat. Add the cheeses and stir until melted. Stir in the pepper, salt and seasoned salt. Drain the pasta, and stir it into the cheese sauce. Serve immediately.
