What it Really Means to Love One Another
God instructs us to love one another, His most important commandment to us all. What does it mean to love one another? It seems difficult, this act of offering love to all. In John 13:34, He said to us, “A new commandment I give to you, that you love one another: just as I have loved you, you also are to love one another.” Have you ever had a moment in your life where you tried to “look busy” to avoid having to help someone out or ignored a stranger who just kept talking to you as you waited in line together at the coffee shop? You’re not alone.
It is human nature for us to remove ourselves from situations that are uncomfortable, but we are called to embrace the uncomfortable and really, truly love others well. God calls us to be brave and to share His love with all who cross our paths. Scripture states that we should “not neglect to show hospitality to strangers, for by this some have entertained angels without knowing it.” Hebrews 13:2 NIV
When it comes to loving others, there are many, many ways to do so, but to start, pray for them. Praying for others daily is an impactful way of loving them unconditionally, just as God calls us to do. Think about the people that are present in your everyday life and ways that you could pray for them. Think about the people that you come across every so often, maybe a relative that you haven’t seen in years or a friend you’ve drifted away from. How can you love them and serve the Lord through prayer?
This year, the National Day of Prayer is on May 2, and we encourage you to ask God to help you step out of your comfort zone. Make the connection, offer encouragement, and start diligently praying for others as an act of love. After all, if we are called to truly love one another - that means we must see past outer appearances, we must see past the little annoying behaviors of others, and we must see past the awkwardness of new situations. We must look past these things so that we can get to the hearts of those who are placed in our paths.
Is there someone in your life you’re feeling God placing on your heart? Maybe you have two or three people in mind? I've been off schedule all week. Said good-bye to a woman who has been a big part of all of my adult life. She was a stunning woman and well loved. Then my husband had a big project and I didn't have the heart for him to have to do it alone so I helped him shovel dirt for two days. Now I am sore and exhausted. But it's done.

Scrambled Eggs Benedict
Gourmet taste without the gourmet fuss
8 eggs
1/2 cup milk or water
1/8 teaspoon pepper
2 tablespoons butter
1 jar (7.5 oz) hollandaise sauce
8 slices Canadian bacon (5 oz)
4 English muffins, split, toasted
Paprika, if desired
In medium bowl, beat eggs, milk and pepper with wire whisk or fork until well blended.
In 10-inch nonstick skillet, melt butter over medium heat. Pour egg mixture into skillet. As mixture begins to set on bottom and side, gently lift cooked portion with pancake turner so thin, uncooked portion can flow to bottom of skillet (avoid constant stirring). Cook 4 to 5 minutes or until eggs are thickened throughout but still moist and fluffy.
In 2-cup microwavable measuring cup, microwave hollandaise sauce on High 1 minute 30 seconds to 2 minutes or until hot; cover tightly to keep warm.
On large microwavable plate, place Canadian bacon slices in single layer. Microwave on High 45 to 60 seconds or until warm.
Place 2 toasted muffin halves on each plate. Top each muffin half with slice of Canadian bacon, about 1/3 cup eggs and 2 tablespoons hollandaise sauce; sprinkle with paprika.

Hope everyone had a great weekend. I did an Easter brunch instead of Easter dinner this year. My guest did not seem to mind. That afternoon I crashed. Snuggled up on the couch with my cat and watched movies most of the afternoon. I was long overdue for an afternoon like that.

Potato Stacks
Looking for something fancy to complement your meal?
4 large russet potatoes (about 2 3⁄4 lb.), peeled
3 tablespoons unsalted butter, melted
2 tablespoons olive oil
1 teaspoon chopped fresh thyme, plus whole sprigs for garnish (optional)
1 teaspoon chopped fresh rosemary
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
Flaky sea salt (such as Maldon)
Preheat oven to 375°F. Coat a 12-cup muffin pan with cooking spray. Cut potatoes into 1⁄16-inch-thick slices using a mandoline or sharp knife.
Whisk together butter, olive oil, chopped thyme, chopped rosemary, kosher salt, and pepper in a large bowl. Add potato slices, and toss until evenly coated.
Working quickly, layer potato slices into stacks in muffin cups, filling each cup to the top. Bake in preheated oven until edges and tops are golden brown and centers are tender, 45 to 55 minutes. Remove from oven, and let potato stacks stand in pan 3 to 5 minutes. Carefully remove potato stacks from pan; sprinkle with sea salt, and, if desired, garnish with thyme sprigs. Serve immediately
